Their new concept, Tu, has taken Walker on a journey that started with unbridled creativity, and has led to a menu that explores the flavors of the Indian subcontinent. Walker said, “I just fell in love with these foods and became really interested in learning more, and especially focusing on being primarily vegetarian while still unique and delicious.” The decision to create such a vegetable forward menu was centered around Walker’s desire to offer diners healthy meals without sacrificing on flavor, and the temperate weather and long growing seasons in the Charleston area mean that he’s able to put a lot of focus on local produce. The vegetable curry section of the menu is directly inspired by the seasonal ingredients produced by local farmers like Spade and Clover, a 5-acre farm on John’s Island growing organic, sustainable produce. Walker never ceases to be impressed by the adventurous nature of Charlestonians, and the outstanding quality of our restaurants. “It certainly has grown in the past 10 years … we have some great people doing cool things that deserve to be appreciated and by and large really are!” Kwei Fei, Spanglish, Jackrabbit Filly and Tu are just a small sample of the outstanding restaurants that are sharing their unique viewpoints with diners in Charleston. But they’re doing more than cooking up diverse cuisine.
