A pastel-colored wine that is pressed directly after harvest, it has a peppery taste that appears just after bottling which melts into a refined mineral taste thanks to the limestone soil these 50-year-old vines grow in. Pomegranate and watermelon candy flavors abound. Pair with: Sautéed vegetables, fennel salad with marinated salmon, lamb dishes and almond cookies. Schlossgut Diel Rosé de Diel 2018 Pinot noir grapes make up this rosé from Nahe, Germany. The majority are whole cluster pressed, while the remaining are gently pressed and left for six hours on the skins in order to achieve the characteristic rosé color, here a deep salmon pink. Taste sublime elements of Pinot noir with raspberry, cranberry and peach skin flavors. Pair with: Light salads with citrus, chicken, seafood and risotto.
