Enjoy a taste of sweet and tart blueberries or rich, golden honey in any of the following recipes. From breakfast on the go to a simple happy hour cocktail to the cobbler that will round out any meal, we’re confident you’ll be on the lookout for these summertime staples to try all of our favorite creations. ----------------------------------- On the Move Blueberry Breakfast Biscuits With Cinnamon Honey Butter Ingredients: 1 can buttermilk biscuits (keep refrigerated until ready to use) 1/2 cup blueberries 1/2 cup room temperature butter 2 tablespoons honey 1 tablespoon cinnamon Dash of salt to taste Instructions: 1. Preheat oven to 450 degrees. 2. When ready, quickly take biscuit dough out of fridge (option to use your own homemade biscuit recipe). 3. Gently pull apart the individual biscuits, and then peel back their layers to insert fresh blueberries and reseal dough without pressing too hard. 4. Bake biscuits until risen and golden. 5. In the meantime, combine the butter, honey and cinnamon. Add salt to taste. 6. Serve biscuits fresh from the oven with the compound butter and a swirl of honey for garnish. 7. Option to crack fresh sea salt over the biscuits for added sweet and salty flavor. ------------------------------------------------------------ Blueberry Honey Jam Ingredients: 3 cups fresh blueberries 2 cups white sugar 1¼ cup honey 1½ tablespoon lemon juice 85 ml liquid fruit pectin Instructions: 1. Bring the blueberries, sugar, honey and lemon juice to a boil in a non-reactive (stainless steel, metal, glass or ceramic) saucepan. 2. Boil on high for two minutes. 3. Remove from heat and stir in the pectin. 4. Evenly distribute into hot, sterilized mason jars to seal and process in hot water bath for 10 minutes or use immediately upon cooling. ------------------------------------------------------------ Blueberry Mojito Ingredients: 2 ounces white rum (option to use blueberry flavored spirit) 1-1/2 teaspoons sugar 1-2 limes, cut into wedges 6-8 fresh mint leaves 1/4 cup blueberries Club soda to fill Blueberry Recipes
