Everyone loves chicken and waffles, but Steve Hampton and myself decided duck needed to be the star of this dish. With the sweet potato waffles and maple bacon glaze, you can’t go wrong. Q: Do you cook restaurant quality meals at home? A: Yes, quite often actually! Q: Is there a particular cuisine you’re drawn to? A: I gravitate toward Italian and Mexican flavors more than anything else. Q: What’s your guilty food pleasure? A: Hands down, wings – any and all flavors, but mostly hot and spicy when possible. Q: What do you like to do when you’re not cooking? A: I enjoy working out with my son on my days off. Q: If you could cook with anyone in the world, who would it be? A: It would be a great experience to cook with acclaimed chef Thomas Keller, who has trained under some of the greatest French chefs in the world and now has his own culinary empire, including The French Laundry – one of many renowned restaurants out in California. Q: What’s your favorite aspect of cooking? What makes it fun for you? A: I love the creative process that it inspires.
