  1. Sauté shrimp in butter or poach in lightly salted water for 1 minute.
  2. Serve over Lowcountry grits.
  3. Garnish with bacon crumbles, scallions & grated cheddar cheese.

Southern Comfort BBQ Sauce

  1. Cook bacon until half-done.
  2. Add onions; sauté until done.
  3. Add bourbon.
  4. Carefully light so that it flames & burns off alcohol.
  5. When flame disappears, add remaining ingredients & season to taste.
  6. Simmer for 10 minutes then cool. Will last under refrigeration for several weeks.

Lowcountry Grits

  1. Heat cream & water to boil.
  2. Add butter, salt & pepper.
  3. Slowly add grits and reduce heat.
  4. Cook 20 minutes, being careful not to scorch mixture.
